No Bake Healthy Weetbix Slice

This Weetbix slice is one of my kids favourites. It is quick to whip up, is packed with goodies and makes a great lunchbox addition.

Prep time: 5 minutes + 1 hr to set

Freezer friendly & lunchbox friendly

INGREDIENTS:

  • 3 Weetbix

  • 1/2 cup pitted dates

  • 1/2 cup desiccated coconut 

  • 1/2 cup sunflower seeds

  • 1 tbsp hemp seeds

  • 2 tbsp cacao

  • 3 tbsp coconut oil, melted 

  • 2 tbsp water

  • 1 tbsp maple syrup 

  • + 1 more Weetbix 

 

METHOD:

Line a loaf tin with baking paper. Soak the dates in boiling water for 5 minutes. Remove dates from the water, then add all the ingredients into a food processor and blitz until the mixture comes together. 

 

Crumble 1 more Weetbix into the mixture and gently mix with your hands or a wooden spoon until it combines. Transfer to the lined loaf tin and flatten the slice with the back of a spoon. Pop in the freezer for at least an hour to set then slice and enjoy!

To store:

Best stored in the fridge in an airtight container. You can also freeze half the batch.
