Carrot Cake Bars

Nut-free and refined sugar free Carrot Cake Bars

These tasty little bars are the perfect way to add extra plants, fibre and omega 3s to your family’s diet. These bars are great as a snack, in a lunchbox or even for breakfast on the go.

Ingredients:

  • 2 small carrots, peeled and roughly chopped

  • 1/2 cup organic rolled oats

  • 1/4 cup desiccated coconut

  • 1/4 cup sunflower seeds

  • 2 tbsp coconut oil, melted

  • 1 tbsp pure maple syrup

  • 1 tsp cinnamon

  • 1/2 tsp baking powder

  • 1 egg

  • 1/4 cup sultanas

  • Optional: melted dark chocolate topping

Method:

Preheat your oven to 180 degrees bake. Add the carrots, oats, desiccated coconut, sunflower seeds, coconut oil, maple syrup and cinnamon to a food processor and whizz until combined. Transfer the mixture to a bowl then add the remaining ingredients and stir until combined.

Spoon the mixture out onto a lined baking tray (ideally 20cm x 20 cm). Pop in the oven and bake for around 15 minutes until golden.

Remove from the tray and allow to cool. Once cooled, you can drizzle melted chocolate over top if you wish, then cut into your desired shape and size!

Storage:

These are best stored once completely cooled in an airtight container and they will last up to 3-4 days. These are freezer friendly too.
